CROCKPOT SPAGHETTI

On cold winter days, I enjoy making dinner in the Crockpot. One of our favorite's is spaghetti; our kids were raised on this recipe, and it's one of picky-picky husbands favorites.

The thick and hearty sauce and tender meatballs take about 4-5 hours on HIGH in my 7-quart Crockpot (you might cut this recipe in half if you have a smaller Crockpot). I love the way my kitchen smells when I make this sauce.

This recipe is totally foolproof.


MEATBALLS OR NO MEATBALLS
1 pound of lean (90%) ground beef
1/2 cup fine DRY breadcrumbs
1 egg
1 teaspoon salt
1/4 teaspoon black pepper
Mix all of the meatball ingredients and shape into walnut size meatballs. Bake in a 350 oven for 15 minutes then drain well before adding to sauce.

*If you would rather have a "loose meat" sauce (rather than meatballs) just brown 1 pound of lean ground beef (plus 1 teaspoon salt and 1/4 teaspoon pepper) then drain it well, and put it in the Crockpot with the rest of the sauce ingredients.

SPAGHETTI SAUCE
(1) 14 ounce can of plain tomato sauce
(1) 12 ounce can of tomato paste
4 cups water
1 tablespoon dry onion flakes
1 cup finely diced carrot
1 clove of minced garlic
1 tablespoon olive oil
2 teaspoons dried sweet basil
1 teaspoon dried oregano
1/2 teaspoon fennel seed (crushed with mortar and pestle)
1 teaspoon salt 
1/2 teaspoon black pepper
1 tablespoon sugar (don't leave this out)
1/4 teaspoon cayenne (1/2 teaspoon if you like more heat)

Put everything in the Crockpot and mix well. Cook on HIGH for 4-5 hours (stirring once in a while if possible but not absolutely necessary).

The last hour, or so, leave the lid open just a crack so the sauce reduces and thickens. Serve over spaghetti noodles.

NOTE: If you like mushrooms, add them the last hour of cooking.

MEAT-LESS SPAGHETTI

My picky-picky husband is a "meat and potatoes" man through and through. If a meal doesn't center around meat.....well, he doesn't call it a real meal. 

That's why I came up with this "Meat-less Spaghetti" (for myself) to counter hubby's "steak night". It is total COMFORT FOOD !!!


1/4 cup olive oil
1 medium sweet onion (chopped)
(2) 14.5 ounce cans diced tomatoes (Italian style)
1/2 teaspoon garlic powder (not garlic salt)
pinch of cayenne pepper  (see note below)
1/2 teaspoon kosher salt (see note below)
2 teaspoons dry basil leaves
1 teaspoon dry oregano
1 teaspoon fennel seed (grind in mortar & pestle)
2 teaspoons sugar
1/4 teaspoon black pepper
8 ounces button mushrooms
1 small red bell pepper (small dice)
black olives are a nice addition 
Any other veggies you like (small dice)
12 ounces spaghetti noodles


Saute chopped onion and red bell pepper in the olive oil until the onion looks sort of transparent and smells "sweet-ish". Put in (do not drain the olive oil) into a large Crockpot (I think mine is a 6 quart size?). Add the diced Italian style tomatoes, garlic powder, cayenne, basil, fennel seed, kosher salt, black pepper and sugar; mix well. Cook on high for about 3 hours.

After 3 hours, slice the mushroom (nice and thick), then put them in the sauce to cook for about 30 minutes.

While the mushrooms are cooking, boil the spaghetti noodles (in salted water) until they are only HALF WAY COOKED (important).

Strain the partially cooked noodles and turn the Crockpot down to LOW. Add the noodles to the sauce and continue cooking for about 30 more minutes. Stir and serve.


I like mine with 
lots of Parmesan!!

NOTE: Remember, kosher salt measures differently than table salt because the tiny grains (in table salt) pack together much closer. The measurement in this recipe is for kosher salt. If you only have table salt......use less.

NOTE: I'm pretty "spice shy", so if you like heat, add more cayenne.

NOTE: Make sure you only boil the spaghetti noodles half way. This is an important step since they pick up a ton of flavor from the sauce as they cook the rest of the way in the Crockpot.

NOTE: Cut this recipe in half if you only have a small Crockpot.

CROCKPOT CHICKEN CHILI

Are you tired of the same old chili recipe? Try this chicken chili!! It is delicious, hearty and super easy to make. Comfort food, through and through. Oh, and it freezes well too!!!

The night BEFORE you want to eat, put (most) of the ingredients into the crockpot and cook on low all night (or for about 8 hours). The next morning, add the raw chicken thighs and shredded carrots and let it cook all day on low. It will make your house smell scrumptious!!!




1 1/2 cups DRY Great Northern white beans (the small ones)
4 boneless skinless chicken thighs
1 cup chopped onion (sauteed)
4 ounce can mild green chiles (I use Ortega brand) 
2 cups grated carrots
3 teaspoons chili powder
1 teaspoon ground cumin
1 clove garlic minced
1/2 teaspoon dry oregano leaves
1/8 teaspoon cayenne pepper (more if you like "heat")
1 teaspoon salt (use salt ONLY if you are using salt free broth)
1/2 teaspoon black pepper
6 cups chicken stock (see note below about salt)
1 cup Monterrey Jack Cheese shredded

Wash and sort the dry beans (do not pre-soak) and put them in the crockpot. Add the chicken stock, sauteed onion, seasonings and green chile's. Cook on LOW setting overnight (or for about 8 hours).

In the morning, remove about 1 cup of the beans and mash them thoroughly. (I put them in the blender)  Return the mashed beans to the crockpot; this will thicken up the broth in the chili.

Cut the raw chicken into large pieces and add it to the crockpot along with the shredded carrots.  Cook this on LOW for another 6 to 8 hours depending on how big your chicken pieces are.

About 30 minutes before you want to serve the chicken chili, add the shredded Monterrey Jack cheese and stir. This adds such a wonderful taste and texture.

NOTE: If you use salt free chicken broth, go ahead and put the teaspoon of salt into the chili. Taste it again after it is finished cooking (and after you've added the cheese) to see if it still needs more salt.   If you use chicken broth made from bullion, don't add ANY salt to the recipe, as the bullion broth is already quite salty.

NOTE: I hope you don't leave out the grated carrot, it really adds a wonderful taste and texture to the chili.

NOTE: We are fairly timid when it comes to spicy heat in our food, so I use an 1/8 teaspoon of cayenne and it is absolutely perfect for us. If you like more heat in your food, just add more cayenne.

NOTE: This makes a big pot of chicken chili. It freezes well.

MAPLE PORK TENDERLOIN IN THE CROCKPOT

This recipe gets five stars for two reasons...it is totally delicious AND super simple. As a matter of fact, it is one of the best crockpot recipes that I've tried in a long time. You cannot get much simpler than this: brown the pork loin, cover it with sauce and 8 hours later (my crockpot only took 6 hours) and you have fork-tender, delicious pork loin and a gravy that is amazing.


 2 1/2 pound boneless pork loin
1 cup real maple syrup (DON'T USE PANCAKE SYRUP)
4 tablespoons Dijon mustard
2 1/2 tablespoons cider vinegar
2 1/2 tablespoons soy sauce
salt and pepper

I bought my pork loin, vacuum packed from Walmart (2½ pounds seems to be a standard size). When you open the package, there will be two long loin pieces. I cut each one into three pieces, then salted and peppered them and browned them in a little olive oil. Place the browned pieces in a wide crockpot for even cooking (as opposed to the taller crockpots).

In a small bowl, whisk the maple syrup (do not use pancake syrup, it is way too sweet and will ruin your pork, trust me), Dijon mustard, cider vinegar and soy sauce together. Pour over browned pork loin pieces. Cover and cook on low for 8 hours (my crockpot took only 6 hours). If you use a different cut of pork, you may have to use the full 8 hours. It isn't absolutely necessary, but try and turn the meat over a couple of times during the cooking process. When it is time to eat, thicken the gravy. I served this with rice and coleslaw. It also made delicious sandwiches the next day.

NOTE: If you are concerned about the maple flavor being overpowering...don't be. As a matter of fact, it is almost a background flavor, but it IS there, and the meat was extremely tender and just slightly sweet. This is a fantastic recipe for any special occasion.

CROCKPOT TURKEY BREAST

SUPER EASY



Have you ever cooked a whole turkey breast in the crockpot? It is fail proof and super moist and tender!!! 

It is so easy, that turkey and gravy won't be "just for Thanksgiving" any more!!  

5 pound bone-in turkey breast
1 envelope dry onion soup mix
3 stalks celery chopped
1/2 cup chicken broth
black pepper


The size of your crockpot will determine how many pounds of turkey you can cook. I've found (bone-in) turkey breasts at the market, weighing as little as 4 1/2 pounds and as much as 7 pounds... but keep in mind that the roast is going to have to fit into your crockpot.

Wash and pat dry your THAWED turkey breast. Trim the meat so that it will fit into the crockpot (I usually have to remove the rib bones (with my kitchen shears) to get the big ones to fit). Coat the surface of the turkey with minimal butter and rub the dry onion soup mix* and pepper all over the surface of the turkey. Put the chopped celery into the bottom of the crockpot and add 1/2 cup of chicken broth. Lay the turkey breast (skin side down) on top of the celery. Cook on low for 5-7 hours (see notes below).

NOTE: You will be tempted to add more than 1/2 cup of broth to the crockpot, but don't. The turkey will produce plenty of liquid (for  gravy) and *don't worry about an over-powering onion soup taste, you won't even know its in there, but it really makes a great addition to the gravy.

NOTE: Everyone’s crockpot cooks at a different temperature, so you will have to keep that in mind. We like our turkey to come easily off the bone, and that takes 6 hours on LOW for a 5 pound (bone-in) turkey breast. Just start testing it after 5 hours.

When turkey is fully cooked, remove it from the crockpot and thicken the juices/broth to make gravy.

This is a great (fool proof) cooking method for turkey breast. There are so many uses for it like "extra turkey" if you are serving a BIG crowd, or extra turkey for next-day sandwiches, casseroles, soups, salads, etc.

CROCKPOT SERIOUS COMFORT FOOD


SERIOUS COMFORT FOOD!!

We call this lasagna (which it isn't) but it qualifies as serious comfort food and has all of the rich, familiar lasagna flavors.

1 1/2 pounds lean ground beef (browned and drained well)
4 cups of beef broth (I used canned)
(1) 15 ounce can of tomato sauce
(1) 12 ounce can of tomato paste
1 tablespoon dehydrated onion flakes
1 teaspoon dry oregano
2 teaspoons dry basil
1/2 teaspoon fennel seed (don't leave out)
1 teaspoons salt (leave out if you use bullion)
1 tablespoons sugar (don't leave out)
1/2 teaspoon black pepper
1/4 teaspoon cayenne (1/2 tsp if you like heat)
3/4 pound of rigatoni noodles
1/2 pound of mushrooms (thick sliced)
2 to 3 cups Colby Jack cheese shredded

Brown the ground beef and drain it very well. In a large crock pot (see note below), Mix the beef broth, tomato sauce, tomato paste, onion and spices. Use a whisk to mix the sauce together well, then stir in the meat and mushrooms. Cook on high for 4 hours (see note). Stir once in a while during the 4 hours if possible (but not absolutely necessary.

After 4 hours, Stir in the DRY unboiled rigatoni, make sure you push them under the sauce (add a little extra hot water if necessary). 

Continue to cook for 30-ish more minutes. Sprinkle the surface with shredded Colby jack cheese and put the lid back on for about 5 minutes or until cheese is nicely melted. Serve.

NOTE: My crock pot is a large oval and wide slow cooker, which works well for this recipe, as opposed to a small/tall one.  The main cooking time is 4 hours on high, but if you are going to be away from the house all day, just turn it down to LOW and cook for 8 hours before you add the noodles. If you are using one of those smaller/taller slow cookers, you may have to adjust the cooking time.

NOTE: Noodles tend to fall apart if you leave them in the crock pot for much more than 30 minutes, so don't be tempted to add them early. Thirty minutes is perfect.

NOTE: This recipe uses rigatoni noodles, which are large diameter tubular noodles that have ridges on them. However, any kind of thick walled (sturdy) noodle (like rotini) will work for this recipe. Just make sure you do NOT BOIL THEM before you add them to the sauce. They cook in the sauce and soak up all of that extra liquid. 

NOTE: I like dehydrated onion in this recipe, but if you don't have that, just saute a small chopped onion along with the ground beef.

NOTE: You can use your favorite cheese. We happen to like Colby Jack cheese, but mozzarella works well too.

NOTE: This reheats very well.

CROCKPOT TACO BEANS

I have been tweaking this recipe for a few years and I finally have it just the way we like it. It is one of those easy recipes that you dump everything in the slow cooker and wait for the magic. 

Canned refried beans just don't "do it" for us after this recipe. Honestly, I could just eat these right out of the slow cooker with a spoon...forget the toppings.

This recipe makes a huge batch of beans (I use a 6 quart slow cooker). 



1 medium sweet onion chopped
3 cups of rinsed (and sorted) DRY PINTO beans (don't soak)
2 tsp. salt
1/2 tsp. black pepper
3 tsp. chili powder

1 tsp. ground cumin
4 ounce can of chopped mild green chiles (do not leave out)
9 cups water (water should be about 3" to 4" above the beans)

I put everything in the crockpot just before bed and cook on low overnight. By morning, the house smells glorious!! You can also cook them in the crockpot on high for 8-ish hours. They are very "forgiving" and don't get soft and mushy.

If you want to make refried type beans, drain the liquid (but save it) and put the beans in the food processor. Puree (adding just enough of the reserved liquid to get the consistencey you want). That's it!! 

Personally, I seldom make them into refried beans. I like to leave them whole and stir them into taco meat, or sprinkle on taco salad, etc.


I freeze the extras in 2 cup portions which makes them super easy to thaw (and they taste just like they came out of the crockpot).

NOTE: Do not pre-soak the beans.

NOTE: If your cooking on HIGH, check the beans after 6-7 hours, if they look like they are a little dry, add another cup of water and stir.

PORK AND PINTOS IN GRAVY

This recipe is very easy, totally delicious and we rate it as pure comfort food. Fork tender pork tenderloin with pinto beans in a delicious gravy AND it all goes together in the crockpot!!

I like to serve this over rice, but it is also tasty stuffed into warm flour tortillas, or over a bed of toasted tortilla chips and smothered with cheese, avocado and sour cream. The possibilities are ENDLESS which is a (very) good thing at our house. 


I like to use a 2 pound pork tenderloin for this recipe because it is nice and lean, but any LEAN 2-3 pound pork roast will work.

My crockpot is a big oval one and it tends to run a little hot, so the pinto beans in this recipe are soft and the pork is "fall apart tender" in 5 hours on the LOW setting.

Depending on YOUR crockpot, it could take as many as 7 hours on LOW, but that is unlikely, just start checking for meat tenderness after 
5 hours.



2 pounds pork tenderloin (thawed)
1 1/2 cups DRY pinto beans (rinsed, but DO NOT soak)

1 (4 ounce) can of MILD green chilies (I use Ortega)
3 teaspoons chili powder (2 if you are serving children)
2 teaspoons ground cumin

2 teaspoons salt
1 teaspoon dry oregano
1 clove garlic minced
1 cup chopped sweet onion

Brown the pork well and put it in the crockpot. Saute the onions and garlic in the same pan and then put it in the crockpot, a long with the DRY beans, spices and canned chilies.

Pour some water over the meat and beans (just enough water to MOSTLY cover everything) it should look like this:



Make sure the liquid gets 
under the meat too!!

After cooking everything on LOW for a few hours, check the liquid level in the crockpot and add a little more water if necessary,  but not TOO much. 

Cook on LOW for 4-6 hours (or until the pork gets fork tender), take the meat (only) out of the crockpot and set it aside while you thicken the gravy. If you are using a pork roast, remove any fatty sections and bones. Pull the meat apart just a little.

Turn the crockpot to HIGH and thicken the broth and beans with a slurry of cornstarch and water, then put the meat back in the thickened gravy (to heat it back up)

THIS IS THE BEST-BEST-BEST GRAVY!!!


IT's DINNER TIME !!!




NOTE: A word about the heat or spice level in this recipe. My hubby does not like a lot of (hates) "heat" in his food. He likes strong flavors, but he just doesn't like "fire" as he calls it. If you like a little "heat", just add 1/4+ teaspoon of cayenne to the cooking liquid.

NOTE: If you have any beans left over after dinner, they make DELICIOUS refried beans. Just mash them in a hot/greased cast iron frying pan with a little of the "gravy", and fry them for a few minutes. You will never buy refried beans in a can again!!

PORK LOIN and APPLES in the SLOWCOOKER

So, you don't want to heat up your kitchen? Try this
super easy slow cooker recipe, it is excellent for any busy day. Pork seasoned with fresh apples and cinnamon and cooked on low for 4 hours, it is moist, delicious and super tender.



There isn't much of a strict recipe here, just a few simple steps.

Using a pork loin roast(about 2-3 pounds) **Not a tenderloin**
1 large apple  (any kind you like)
honey
1/2 cup chopped onion (more if you like)
1/2 cup chopped celery(more if you like)
1 teaspoon table salt
1/2 teaspoon black pepper
1/2 teaspoon cinnamon



Slice the pork loin into  nice thick slices but not all the way
through the meat....cut about 75% of the way through. Sprinkle the salt and pepper in between each slice




Put a nice thick slice (or two) of apple into each cut.



Drizzle with honey


Saute the onions and celery in a little butter until they are almost tender, then lay them on top of the pork and apples and sprinkle everything with just a little more salt and pepper and the cinnamon.

Using a long spatula, lift everything into a greased slow cooker.
Cook it on low for 4 hours. 

Pour a little bit of the broth (that will have formed under the roast) over the meat on your plate and serve.

FOUR INGREDIENT PORK DINNER

It doesn't get any easier than this one folks. Four ingredients thrown into a Crockpot and six hours later, dinner is ready.


2 to 3 pound boneless pork loin (see note below)
1  16 ounce bottle of your favorite flavored barbecue sauce
8  ounce can crushed pineapple (juice and all)
1/2  teaspoon liquid smoke

Stir the barbecue sauce, undrained pineapple and liquid smoke together and pour it over the raw pork loin (in the Crockpot).

Cook on LOW for five to six hours (I cook it for 6 hours). Turning the meat over once or twice during that time.

Just before you are ready to eat. Remove the meat and thicken the sauce (I use a cornstarch slurry), then put the pork back in the sauce to keep it hot till it's time to eat.

This sauce is absolutely delicious. Even my picky-picky husband gave it a thumbs up (twice!!) and it could NOT be easier.

NOTE: I'm sure this would work with a pork tenderloin, but I haven't tried it so I can't recommend a cooking time.

CROCK-POT MASHED POTATOES

This is a great method for making mashed potatoes for a crowd (and keeping them HOT). It seems like I'm always short on time (or a burner) when it comes to last minute side dishes during the holidays, so this method is a big help.

 
TO FEED A CROWD

5 pounds peeled potatoes cut into 1" cubes
1 cup water
1/2 cup butter cut into small cubes
1 teaspoon salt
1/2 teaspoon black pepper
1 to 1 1/2 cups HOT half and half (divided)

A large (7-quart) Crock-pot will
hold the above ingredients


If you are only feeding a family of 6, 
cut the above ingredients in HALF and
put it in a 4-quart Crock-pot:
 
 
In either case, spray the Crock-pot with cooking spray and put the raw cubed potatoes and butter pieces into the Crock-pot.

Mix the water with the salt and pepper and pour it over the potatoes and butter pieces:


 
Cover with the lid and cook on high for 4 hours (or till tender). TIP: If you put a couple of potholders on the top of the Crock-pot lid (as shown in the above photos),the potatoes will be cooked in 3 hours instead of 4.
 
After the potatoes are tender, DO NOT DRAIN. Next, give them a rough mash with a hand-held potato masher, then add 1 cup of the HOT half and half and finish whipping the potatoes with an electric mixer (do this step right in the Crock-pot). Taste the mashed potatoes; then stir in the final half-cup of HOT half and half (if you think it needs it).
 
These mashed potatoes will stay hot (on the warm setting of the Crock-pot) for at least a couple hours. You can also ensure they will stay hot by covering the crockpot with a heavy towel.

CROCKPOT PORK LOIN

This recipe is ultra easy, ultra fast and ultra delicious!! What more can you ask for? And, oh, did I mention...it cooks by itself in the Crockpot!!

The end result is moist, fall apart tender, sweet-ish, completely full flavored and very versatile. It is going directly into my "make often" recipe box!!

2 pounds (approx.) pork loin (tenderloin will work too)
1/4 cup LOW SODIUM soy sauce (regular will be too salty)
1 tablespoon regular old yellow mustard
1/4 cup real maple syrup (not pancake syrup)
2 tablespoons canola oil (or vegetable oil)
2 tablespoons dried onion flakes
3/4 teaspoon garlic salt

Put the oil in your crockpot and rub it around to cover the cooking surface. Put the pork loin in.

Mix everything else and pour over the meat.  Put the lid on and cook on LOW for 6 hours. Turn it over half way through if you can, but its  not totally necessary.

After 6 hours, remove meat and thicken the sauce and put the meat back in. Whether you thicken the sauce or not, is just a matter of preference, it tastes the same.

NOTE: I use this recipe using a 2 pound pork loin roast, but a tenderloin will work too. I haven't tried the recipe with any other cut of pork.

NOTE: Make sure you use low sodium soy sauce or the final dish might be a tad salty for you.

DULCE de LECHE (Made in the crockpot!!)

Yes, you heard me right, dulce de leche made in the crockpot!! The first time I tried it, I was very skeptical, but it works like a charm and couldn't be easier.

Fill crockpot with COLD water. Put an UNOPENED can (with paper label removed) of sweetened condensed milk (not evaporated milk) into the cold water, making sure that the water is 2" taller than the can. If you are doing more than one can, make sure there is at least 2" of space BETWEEN each can as well. 

Put the lid on the crockpot and let it "cook" on LOW for EIGHT HOURS. Take the cans out of the crockpot and dry them off and label them. If you are going to use them right away, let them cool down a couple hours before you try to open the can. Cooled and unopened cans can be kept in the pantry like you would any other canned item.



DISCLAIMER: people that make Eagle Brand Sweetened Condensed Milk never anticipated people heating their product in an unopened can. As a matter of fact, I'm sure they would disapprove, so please, if you try this method, use (common sense) caution....but it has worked VERY WELL for me and for many other people I know.

NOTE: One friend that had a white crockpot, said that the can left a permanent "ring" on the bottom of her crockpot; I didn't have that problem (my crockpot is black). If you are concerned, put a layer of paper towels under the can/cans before you add the cold water.

CHICKEN BAKED POTATOES and CHICKEN AND DUMPLINGS

This weekend was cold, rainy, gloomy and leaf-less; without falls bright yellow leaves everything looks so dreary. We've had several hard freezes and the snow line on the mountain behind our house is creeping very near; it won't be long. To celebrate the completion of our annual "winterizing", we decided to enjoy a lazy weekend. Saturday, I put chicken breasts and veggies in the crockpot and at dinner time, I just thickened the broth and served it on split baked potatoes.


4 boneless, skinless chicken breasts
3 cups chopped veggies
½ cup chopped onion
1 cup chopped celery
1 cup chopped carrot
4 cups good quality chicken broth (not bullion)
pinch of dried thyme
pinch of poultry seasoning
pinch of dried basil
½ teaspoon black pepper
1 teaspoon salt

Saute onions in a little butter until they mellow, then put everything in the crockpot and cook on low for about 6 to 8 hours (check for chicken tenderness at 6 hours). You want the chicken to be nice and "fall apart" tender. Thicken broth and serve over large baked Yukon gold potatoes that are cut in half.

On Sunday, I used the crockpot leftovers for another lazy day meal:

CHICKEN AND DUMPLINGS
 

My mother made wonderful chicken and dumplings, so our Sundays dinner was a trip down memory lane for me...Hubby, not so much. He courageously gave the dumplings a taste then gave me one of those squinty "I don't think so" glances and politely moved the dumplings over to the side of the bowl and ate everything else. Oh well, I enjoyed them thoroughly.


In a saucepan, cook 3 diced potatoes in seasoned (salt & pepper) chicken broth. Add them to the crockpot leftovers. For chicken and dumplings you want a liquid that is the consistency of gravy. If your leftovers seems to thick, add just a little bit of the chicken broth you boiled the potatoes in. If it seems too thin, thicken it with a little bit of corn starch slurry. When your gravy is the right consistency, bring it to a strong simmer.

Dumplings
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon chicken bullion granules
2 tablespoons melted butter
3/4 cup milk
pinch of poultry seasoning

Mix everything JUST UNTIL MOISTENED and let it sit for about 5 minutes. Drop heaping teaspoons of dumpling mixture onto the SURFACE of the simmering gravy. Put a TIGHT FITTING lid on the pan and cook for 15 minutes (do not peek). At the end of 15 minutes, test the dumplings for doneness with a toothpick. If they are not cooked thoroughly, put lid back on and cook another 5 minutes. Spoon gravy over dumplings before serving.
