4 cups peeled & diced Rome apples (dice = size of a shelled almond)1½ cups of sugar
1 cup chopped pecans

Mix the above ingredients, in a large mixing bowl and let them stand at room temperature for one hour (it will make extra juice which you will use in the batter).

3 cups all purpose flour
½ teaspoon nutmeg
½ teaspoon cinnamon
½ teaspoon salt
2 teaspoons baking soda
2 teaspoons vanilla extract
1 cup vegetable oil
2 eggs, lightly beaten

Mix the wet ingredients together and gently stir the mixture into the apples with juice, add the dry ingredients and stir with wooden spoon just until everything is incorporated.

Pour the batter into a greased and floured angel food pan. Bake at 350 for 1 hour 15 minutes, remove from pan immediately.

Coleen, I dont have an angel cake pan. Do you think it would work in a bundt pan? What kind of icing did you put on the cake? It looks delicous.

To MSW mom: I don't think a bundt cake would work for two reasons: this is a BIG cake and I think it would (when baked) overfill a bundt pan....depending on how big your bundt pan is. Just make sure you grease the pan well.

APPLE CAKE FROSTING: I'm afraid I never use a recipe for my cake glazes, but I'll do my best. I use about 3 tablespoons melted butter in a bowl,to that I add 1 teaspoon vanilla, ¼ teaspoon almond extract, a tablespoons light corn syrup and 2 cups of powdered sugar and a couple tablespoons of milk. Whisk like crazy..if its too thick, add a few drops more milk, if its too thin, add a couple more spoons of powdered sugar. Sorry, I can't be more specific (I've never written it down). Coleen

I see that you've glazed this scrumptious looking cake. Is it a traditional powdered sugar and milk (?) kind of glaze? Did I miss that in the recipe? This looks fast and easy-- my kind of dessert!

Hi apple cake looks yummo, but i have 2 questions, can you use other apples besides Rome apples and what is an angel food pan? if you could answer these questions for me i will most definitely be giving this recipe a go, yummo, thanks for sharing
To JEANETTE: Any apple that you would cook with will work well. An angelfood cake pan is a 2 piece pan that has a little "tower" in the center (see photo of cake). Just google angelfood cake pan and you'll see one. I'm sure you could bake it in a flat 9x 13 pan too, but I don't know the baking time.

Just made this for our family supper. It was delicious! I dusted it with powdered sugar. However, I would definitely make your glaze (or one of my children suggested cream cheese frosting) if serving for company. Thanks Coleen!
