CREAM CHEESE WAFFLES

More often than not, we have sourdough waffles or sourdough pancakes on the weekends. However, recently I've been searching for a quick-fix waffle recipe and I have found a great one in our electric co-op newsletter, submitted by a lady named Sarah Wolcoff. Her deliciously moist and fluffy cream cheese waffles are oh so good!!!

1¾ cup all purpose flour
2 tablespoons brown sugar
1 tablespoon baking powder
1/8 teaspoon salt
(1) 3 ounce cream cheese (room temperature)
2 eggs (separated)
1½ cups milk
2 tablespoons vegetable oil
1 teaspoon vanilla extract (my tweak)

Mix the cream cheese and 2 egg yolks together until smooth; stir in milk, vanillaextract and vegetable oil. Add dry ingredients and stir just until combined, it will be a little lumpy. Beat 2 egg whites until stiff peaks form and then fold them gently into the batter, leaving lots of fluffs of egg white (don't over mix). Cook in waffle iron. Recipe makes about 6 good size waffles

YUM! I am def. a waffle girl. Pancakes are good, but too soggy sometimes. Can I come over for breakfast? :)

We love waffles on the weekends! I've never tried them with cream cheese in them, I bet it makes them taste so much richer. Yum!

I've never tried waffles with cream cheese before, I haven't used my waffle maker in a long time, maybe it;s time for it to come out it's hiding place.. those waffles look really GOOD! :)

My 25-year-old waffle iron just went cold on us; our local Wal-Mart doesn't sell them, and now I'm seeing these cream cheese waffles and I have to WAIT to make them. Life is so unfair. Grins.

This is a delicious recipe! I made it as is, with no variations. My family of 4 loved it! Great flavor. I needed to use some cream cheese up from my fridge, which led me to this delicious recipe.
