This recipe, starts with a box of Jiffy corn bread mix, some hot dogs and cheese.Make the corn bread mix according to the package directions. Lightly grease a cupcake pan and put a couple spoonfuls of prepared muffin mix into each hole. Put 1/4 of a hot dog and a piece of your favorite cheese on top of the batter and top it with a little more batter. Bake as per the box instructions. That's it! What could be quicker?
What I think is great about this "recipe" is the endless possibilities! You can "fill" the muffins with little smokie's, or left over taco meat, or chili; just about anything would work.
What a quick, inexpensive, easy and tasty hot lunch for the kids!! Thanks for the idea BreeAnn!!

Gosh, this is such a great idea. I LOVE those little boxes of corn muffin mix! And aren't you good to think about using leftover chili, etc. Now that sounds terrific too! Oh, I think I NEED this! My mouth is watering!

I made baked corndogs earlier in the year and while I thought they were very clever, I didn't love the cornbread recipe. In fact I wrote in my post that I thought Jiffy was better! So I know I'd love these! Thanks to you and your daughter!
